Mattë is located in Santos and is quite an exceptional Japanese restaurant that operates in two areas: in the bar, where kaiseki cuisine takes the lead, and in the main room, with an à la carte service. In charge of this more traditional Japanese restaurant is Habner Gomes, an experienced sushi man who has been working in Lisbon for several years. Guests who sit there have a chance to talk to him, and the seasonal menu is paraded in front of them – where the nigiris – to be eaten by hand, without soy sauce – is the height of the meal.

Insider tip. The yellowtail collar is one of the best dishes in the restaurant – perhaps in Lisbon.
