João Bívar, chef and owner of Shun Open Kitchen, swapped mechanical engineering and surf lessons for a sushi course taught by the renowned Paulo Morais. He worked on a number of projects in the city and even set up a sushi home delivery service before opening his own restaurant. The restaurant has a running bar, built on the same level as the kitchen, which allows customers to appreciate the technique and mastery of the team, committed to making fusion sushi with fresh fish from the Mercado 31 de Janeiro.
